1 cup mushrooms of your choice, cleaned and sliced
2 carrots, medium and thinly sliced
2 garlic cloves, minced
2 tbsp soy sauce
1 tsp sesame oil
1 tbsp fresh basil, chopped
1 tsp maple syrup
1 tsp oil of your choice for stir fry
¼ tsp cumin
Salt and black pepper, to taste
1 tsp rice vinegar
Directions
- Heat up your pan over medium heat and add any oil you want for stir-frying.
Once it’s hot, toss in the minced garlic and let it sauté for about 30 seconds to 1 minute until it’s fragrant but not browned. - Add mushrooms you like and carrots. Stir them around and let them cook for 5-7 minutes. Let the mushrooms soften up and the carrots to be tender but still slightly crisp.
- Stir in the coconut aminos or soy sauce, sesame oil, rice vinegar, and maple syrup. Let everything simmer for another 1-2 minutes, so the sauce coats the vegetables evenly.
- Toss in the chopped basil and stir everything together. The basil will wilt slightly and release its aroma.
- Its ready. Enjoy this mushroom and carrot recipe, stir fry. Serve it over rice or noodles, or keep it as a light side dish.
Notes
- You can add other vegetables like bell peppers, snow peas, or baby corn to make the stir-fry even more colorful and flavorful. For a heartier dish, you can add cooked chicken, tofu, or shrimp.
Don’t overcook the carrots—they should still have a slight crunch for the best texture.
