Simple Maitake Mushroom Recipe

Maitake mushrooms also known as the “Hen of the Woods“are edible mushrooms with meaty texture and mild mushroomy taste. These mushrooms are large, dark gray-brown in color and grow in clusters of fan-shaped, wavy caps. This mushroom gets its name from resembling a hen sitting on her nest. They are not only delicious but also packed with nutrients and hold immune boosting properties. These mushrooms are also rich in antioxidants, vitamins B and C, and minerals like potassium and copper.

They can be sautéed, roasted, grilled and even used in soups recipe. I like Garlic Butter Sautéed Maitake Mushrooms but here today, I am going to share a super simple maitake mushroom recipe, Roasted Maitake Mushrooms.

Roasted Maitake Mushroom Recipe

Ingredients

  • 450g fresh maitake mushrooms
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • 1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried rosemary)
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper
  • 2 tablespoons balsamic vinegar (optional)
  • Fresh parsley, chopped (for garnish)

Instructions For Roasted Mushrooms

  1. Prepare the Mushrooms
    Clean the mushrooms gently with a damp cloth or paper towel. Trim the stems if necessary and cut larger mushrooms into halves or quarters for even cooking.
  2. Preheat the Oven
    Preheat your oven to 425 degrees.
  3. Warm Iron Skillet
    Warm cast iron skillet at medium heat.
  4. Toss The Mushrooms
    Toss the mushrooms with olive oil, black pepper, minced garlic, thyme and salt.
  5. Roast the Mushrooms
    Place the skillet in the preheated oven and roast for 15 minutes. The mushrooms will be golden brown and crispy when done.
  6. Garnish and Serve
    Remove the mushrooms from the oven and transfer them to a serving dish. Garnish with freshly chopped parsley for a pop of color and freshness.

Notes and Tips

Sunbathing
I always advise Sun-basking mushrooms, especially mushrooms like shiitake, maitake, and portobello, as it helps increase their vitamin D content. The ideal time for sun-basking mushrooms is during peak sunlight hours between 10 a.m. and 2 p.m., for about 30 minutes to 2 hours, depending on the intensity of the sunlight.

Customize the Herbs
Feel free to add other herbs like oregano, sage, or tarragon based on your preference.

Make it a Meal
