1 cup of mushrooms, sliced (button, cremini, or shiitake)
2 cups fresh or frozen corn kernels (about 2 ears of corn if using fresh)
1 onion, finely chopped
2 cloves garlic, minced
1 tablespoon butter or olive oil
1/2 teaspoon smoked paprika (optional)
Salt and pepper, to taste
1/4 teaspoon red pepper flakes (optional)
Fresh parsley, chopped, for garnish
Juice of 1/2 lime (optional)
Directions
- Chop the onion.
- Clean and prepare mushrooms.
- Slice mushrooms.
- If fresh, boil and Cut the kernels off the cob.
- In a large skillet, heat the butter or olive oil over medium heat. Add the chopped onion and garlic and sauté for about 2-3 minutes until softened and fragrant.
- Add the sliced mushrooms to the pan and sauté for another 4-5 minutes, stirring occasionally, until the mushrooms release their moisture and begin to brown.
- Keep cooking until mushrooms are brown.
- Add Kernels, cook for 4-5 minutes, allowing the corn to heat through and slightly caramelize for a sweet, slightly crispy texture. Transfer the sautéed corn and mushrooms to a serving dish, garnish with freshly chopped parsley and serve immediately. If you’re using frozen corn, make sure it’s completely thawed before adding.
- You can squeeze fresh lime juice over the dish for a burst of zesty flavor.
